Fermented pine drink is a refreshing brew of pineapple skins, water, spices, and sugar that tastes similar to kombucha. It takes 2-3 days for the pineapple to ferment but it's so worth it! Add it to your Guyanese summer beverages along with some Mauby.

Ingredients
1large pineapple(peeled, you only need the skin for this recipe)
8cupswater(room temperature)
1cinnamon stick(optional)
2cloves(optional)
1cupsugar(Demerara or Turbinado preferred)
3dropsangostura bitters(optional)
Instructions
Gently rinse the pineapple and pat dry. Do not use baking soda, vinegar or any fruit washes as it will kill the natural enzymes needed for fermentation.
Peel the pineapple, enjoy the juicy fruit but add the skin to a large jar with a lid. You only need the pineapple skin for this recipe. Then add the cinnamon and whole cloves, if using.
Next add about 8 cups of room temperature water to the jar, cover and place in a cool, dark place for 3 to 5 days or until froth forms at the top and the mixture becomes a bit cloudy with some visible bubbles.
When the fermented pine drink is ready, pour off the liquid into a large pitcher. This is best if poured over a fine mesh sieve. Then add the Demerara sugar and mix until the sugar dissolves. You can also sweeten with maple syrup, honey or any other sweetener of your choice.
Finally add 2-3 drops of angostura bitters and stir to combine.
Pour over ice and serve with a garnish of your choice. I love adding a few orange or pineapple slices.
