Coconut rice is a simple stovetop recipe that cooks up fragrant and fluffy every time. Cooking the rice with coconut milk adds a rich aroma and flavor that makes this side dish feel restaurant-worthy.

Ingredients
2tbspcoconut oil
2 cupsJasmine Rice(rinsed)
1tablespoonGranulated Onion(or onion powder)
1tspGranulated Garlic(or garlic powder)
1tspKosher Salt(or salt to taste)
1/4tspBlack Pepper(optional)
1canFull Fat Coconut Milk(About 13 ounces)
2cupswater
Instructions
Heat a large skillet or rice pot over medium heat. Add the rinsed rice, granulated garlic, granulated onion, salt and pepper. Stir to combine and continue to cook for about 2-3 minutes stirring once or twice.
Then add the coconut milk and water then stir well, freeing any rice stuck to the bottom of the pot.
Increase the heat to high and bring to a boil uncovered. Then reduce the heat to low, cover and simmer until the rice is fully cooked (about 20 minutes).
Fluff the rice with a fork and serve warm.
Notes
This recipe is perfect for flavorful rice with little effort. When I have a bit more time I cook some fresh aromatics at the beginning of the dish.
You can add some sliced scallions at the end and before fluffing if you like. It adds a nice flavor.
