Fluffy Coconut Rice Recipe

Coconut rice is a simple stovetop recipe that cooks up fragrant and fluffy every time. Cooking the rice with coconut milk adds a rich aroma and flavor that makes this side dish feel restaurant-worthy.

Equipment

  • Large Skillet or large rice pot
  • Fork
  • Wooden spoon or spatula

Ingredients

  • 2 tbsp coconut oil
  • 2 cups Jasmine Rice (rinsed)
  • 1 tablespoon Granulated Onion (or onion powder)
  • 1 tsp Granulated Garlic (or garlic powder)
  • 1 tsp Kosher Salt (or salt to taste)
  • 1/4 tsp Black Pepper (optional)
  • 1 can Full Fat Coconut Milk (About 13 ounces)
  • 2 cups water

Instructions

  • Heat a large skillet or rice pot over medium heat. Add the rinsed rice, granulated garlic, granulated onion, salt and pepper. Stir to combine and continue to cook for about 2-3 minutes stirring once or twice.
  • Then add the coconut milk and water then stir well, freeing any rice stuck to the bottom of the pot.
  • Increase the heat to high and bring to a boil uncovered. Then reduce the heat to low, cover and simmer until the rice is fully cooked (about 20 minutes).
  • Fluff the rice with a fork and serve warm.

Notes

  1. This recipe is perfect for flavorful rice with little effort. When I have a bit more time I cook some fresh aromatics at the beginning of the dish. 
  2. You can add some sliced scallions at the end and before fluffing if you like. It adds a nice flavor.
