This Month’s Theme: Make Your Own Caribbean Meal
A great Caribbean meal doesn’t have to be complicated. This month’s recipes include the building blocks of a delicious plate, from flavorful mains to classic sides, so you can mix and match your favorites or simply try the recipe that catches your eye.
Whether you’re looking for a new weeknight dinner or a Sunday meal to share with family, these recipes are a great place to start.

Recipes to Make This Month
Easy Caribbean Stew Chicken
If you’ve been wanting to try stew chicken but don’t have hours to spend in the kitchen, this recipe is for you. I use boneless chicken thighs to make a version that’s full of rich, familiar flavor and ready in about 30 minutes.
Quick Chicken Curry
If you’re looking for a chicken curry that’s rich without being saucy, give bunjal chicken a try. As the curry cooks down, the spices coat every piece of chicken, so it’s especially good with rice or roti.
White Rice
White rice is a staple in Caribbean kitchens, and once you learn this method, you’ll have the perfect side for everything from stew chicken and curry to beans and vegetables. If you’ve ever ended up with rice that’s too wet or too firm, I’ll show you exactly how I make it.
Guyanese Bhaji (Sautéed Spinach)
If you’re looking for a simple vegetable side, bhaji is hard to beat. Fresh spinach cooks down with garlic and tomatoes into a dish that pairs well with just about any Caribbean main.
