Yesterday I did some veggie chopping and LIVE cook Yesterday I did some veggie chopping and LIVE cooking. During the LIVE I shared that I was cooking up all of my veggies because I accidentally forgot them in my car trunk. Has this ever happened to you? ⁣
⁣
Here’s the story: I went grocery shopping at my local Asian market on Friday and bought lots of Caribbean/Caribbean Adjacent vegetables and put those in my trunk. Then I went to another store and bought a few things that I put on the front passenger seat. When I got home I grabbed those bags on the front passenger seat and completely blanked on the veggies in the trunk. ⁣

Yesterday I went to grab something from the trunk and there were the bags of veggies staring right back at me. 😩😩😩⁣
⁣
I salvaged what I could and cooked them up last night. During the LIVE I said these would come in great as already prepped sides for dinner this week. Then as I was plating up dinner for my family, the smell of these veggies were irresistible and I ended up making a plate with a little bit of everything! And I can’t say I regret it. Everything was so tasty and I enjoyed every bite. ⁣

My love for pumpkin is deep. Pumpkin and roti was a frequent meal during my childhood. Tonight we’re having pumpkin and roti for dinner and I’m just reminiscing with every bite. ⁣

Today is National Muffin Day and I had a banana nu Today is National Muffin Day and I had a banana nut muffin lined up to share but I cannot get over how delicious these Gluten Free Cheese Rolls are!⁣

Let me tell you a story of a Guyanese Girl (me) finding out she can’t eat gluten. Now, imagine my family asking me to make pine tarts, beef patties and cheese rolls (my absolute fave) on a regular rotation. Imagine how tempting it is to just take a tiny bite. Then the stomach cramps, the headaches, the bloating that follows, every time. It just was not worth it to me. So I worked on creating a gluten free recipe for short crust pastry dough. ⁣
⁣
Like most gluten free things they never taste exactly like the original gluten filled ones and in the beginning these didn’t. So I kept working at it and testing it until it was perfect. And I know it’s perfect, not because I say so because honestly when you’re gluten free, you’ll eat and enjoy anything that comes close to the original. ⁣
⁣
But I know it’s perfect because I’ve given these to my family without announcing that they are gluten free and no one knew that they were gluten free. That’s how good they are. ⁣

Late Night Post: My dominant Love Language is Acts Late Night Post: My dominant Love Language is Acts of Service (#fivelovelanguages). So it’s only natural that for Sunday dinner on this made up holiday about love that I would throw down a Caribbean Classic! Oxtail, pumpkin cook-up (recipe testing), cornbread (#glutenfree), fried ripe (sweet) plantains and some salad to balance everything out. Everyone gave it two thumbs up and little Axel only wanted the oxtail bones. What can I say he’s a Guyanese pickney (child) at heart! 🇬🇾🇬🇾⁣

I shared a little about why plantains are such a permanent feature in my life and it went viral. Who knew that these seasoned plantain fries would be such a hit. Are you making seasoned plantain fries. They are a great anytime dish. Perfect for breakfast with eggs. Great with nuggets for lunch. And pair with fish and a salad for dinner. Or just eat them with some spicy ketchup for an anytime snack.

Tonight’s dinner looks a lot like this: Fry pumpkin (by which I mean sautéed pumpkin cause fry and sauté are synonyms if you’re Guyanese 😩), pan fried red snapper (I used cassava flour) and cauli-rice (I just fried it up in coconut oil and of course you know I meant sauté 😉). And that red little cherry is a wiri wiri pepper. It’s a type of chili. It should be Guyana’s national pepper, if it’s not I’m calling it. It’s 🔥🔥🔥and a taste of home in every bite. Happy Monday!⁣

You can use your favorite store bought jerk marinade. Or you can follow my recipe and make your own delicious marinade. Dinner last night looked like this. Dhal, Beef and Dinner last night looked like this. Dhal, Beef and Potato Curry and Roti (for the gluten eaters). A meal like this would typically take a couple of hours to cook but I did this in 45 minutes with my @instantpotofficial. 45 minutes to cook three dishes!! The dhal cooks in 20 minutes, the beef pressure cooks in 30 minutes and the roti took 30 minutes. I did it all simultaneously because with the instant pot you set it and forget it.
