What is mango sour?
Mango sour is a sauce made with green mangoes, herbs, spices and spicy hot pepper.
Ingredients for Instant Pot Mango Sour
Since mangoes are the main ingredient for this tasty sauce, its best to make this when the fruit is in season (May-September).
- Mangos: Firm and green, peeled and fleshy part cut from the seed.
- Wiri wiri peppers: Use this or a similar hot chili pepper.
- Salt: To taste.
- Onion: Diced.
- Garlic cloves: Chopped.
- Roasted ground cumin: Use this or geera.
- Water: This improves the consistency.

The Best Mango for Instant Pot Mango Sour
Most people think that you need really green mangoes for making sour. However the best sour I’ve made comes from a combination of really green and half ripe (firm or “turning” mangoes).
I live in the United States and it is so hard to find really green mangoes. When I am buying mangoes for mango sour, I look for mangoes that have lots of green color in the skin, but also are really firm to the touch. If the mango is soft, then it will not work.
The mango also has to be sour in taste. If the mango is sweet you may need to add a bit of white vinegar to the finished product for that slightly sour and acidic taste that sour is known for.
How to Make Mango Sour in the Instant Pot

Instant pot mango sour is as basic as any instant pot recipe gets. Add all your ingredients to the instant pot. Seal up, pressure cook, release the pressure, let it cool, enjoy.

Look at how smooth and absolutely delicious this looks. To pull my mango sour together, after pressure cooking I used a fork to crush the mangoes and seasoning and then mix everything together. That’s it!
This mango sour was loaded with flavor and it had a slightly sweet flavor because one of my mangoes was a little sweet. It was the best sour I’ve made to date. I am never going back to making sour on the stovetop!
Storage
Store leftover instant pot mango sour in an airtight container or jar. It will last in the fridge for up to 2 weeks. For longer storage, freeze for up to 3 months.
Tips for the Best Instant Pot Mango Sour
- The sliced mango doesn’t need to be cut perfectly. Everything gets mashed inthe end. Just ensure the pieces are roughly the same size so everything cooks at an even rate.
- Mash the cooked mango sour to your desired consistency. Some like their dipping sauce smooth, like a puree while others (like me) like it a bit lumpy.
- Use whatever you have on hand to mash mango sour. I suggest a food processor, a potato masher, an immersion blender, or even a fork.
Recipe Variations
- Sugar or No Sugar. I do not use sugar in my instant pot mango sour recipe but some do. It comes down to personal preference and I prefer a spicier sauce. Plus, the mango has natural sweetness and I like the sourness of the unripe mangos.
- Seeds. Unlike most stone fruits, mango seed is edible. And the seed of unripe mangos is actually pretty soft so some may add it to the instant pot. Simmer it in the sauce for extra nutrients.
Frequently Asked Questions
For the best results, use unripe or green mangos. But if all you have are sweet ripe mango, add a bit of white vinegar to the finished product for that slightly sour and acidic taste that mango sour is known for.

Ingredients
- 2 Mangos firm and green, peeled and fleshy part cut from the seed
- 2 wiri wiri peppers or similar hot chili pepper
- 1 teaspoon of salt
- I small onion diced
- 4-6 cloves of garlic chopped
- 1/2 teaspoon of roasted ground cumin or geera
- 1/4 cup of water
Instructions
- Add all the ingredients to the instant pot, then mix together
- Seal up the instant pot and pressure cook on high for 10 minutes
- Next once the Instant Pot has completed its cycle release the steam
- Then using a fork, crush the mango flesh, garlic, pepper and onions, then mix together well
- Allow to cool completely then enjoy with your favorite snacks
